Savannah Trout Almandine

2 trout filet

1/2 cup almonds

1/4 cup Southern Almond Mix

1 tbsp melted butter

​Cover one trout filet with chopped almonds and top with second filet. Drizzle with Southern Almond Mix and a little melted butter and bake on 350 degrees for 20 minutes, or until desired doneness.


Fish Almandine

4 fish filet

1/2 cup Sugar free Southern Almond Mix

2 tbsp. dry seafood boil

1/4 cup slivered almonds

Sprinkle fresh fish filet with Sugar free Southern Almond Mix and dry boil.  Bake at 350 degrees for 20 minutes, or until done. Sprinkle with almond silvers before serving.



Savannah Scallops

1 lb scallops

1/2 cup finely chopped green onions

1/2 cup finely chopped fresh mushrooms

1 to 2 tbsp butter

1/2 cup heavy whipping cream

1/2 Southern Almond Mix

Saute' scallops, onions, and mushrooms in butter until they are opaque. Transfer to a warm plate. Add whipping cream and Southern Almond Mix to skillet. Simmer until mixture coats the back of a spoon. Add scallops back to pan until just heated through. Serve over yellow or white rice.


Coconut Battered Shrimp

1 egg

1/4 cup milk  1/4 cup Southern Almond Mix

1/2 cup flour

1/8 tsp. salt

1 tbsp. melted butter

1 7 oz bag grated coconut

1 lb jumbo shrimp

1 cup cornstarch

1/2 cup orange marmalade 

3 tbsp. Southern Almond Mix

1 tbsp prepared horseradish

Beat together until smooth the egg, milk, Southern Almond Mix, the flour, the salt, and the melted butter.Stir in a 7 oz bag of grated coconut. Chill for 2 hours. Dredge shrimp in cornstarch, then coat with batter and deep fry for 2 -3 minutes. Just before serving, combine the orange marmalade, Southern Almond Mix, and the horseradish for a great dipping sauce.


Chicken Almondine

4 chicken breast halves

butter

Morton's Natural Seasoning salt

3 tbsp. Southern Almond Mix

Slivered almonds

Saute' chicken breast halves in butter until lightly browned. Sprinkle with Morton's Natural Seasoning Salt. Spoon Southern Almond Mix over chicken. Cover and cook about 20 minutes. When ready to serve, sprinkle slivered almonds over chicken.



Almond Pork Loin Roast

1 boneless pork loin

1 cup toasted chopped Almonds

1 cup Southern Almond Mix

Fill a boneless pork loin with toasted chopped almonds, roll and tie. Sprinkle generously with Southern Almond Mix and let marinate for at least 2 hours. Put on rotisserie or grill and baste with Southern Almond Mix during cooking.
