No-Berry Blueberry Cobbler
Preheat oven to 325. In a greased 9 x 13 baking dish, spread 20 oz. can of crushed and drained pineapple to cover bottom; stir in 1 cup Southern Blueberry Mix. Evenly spread dry yellow cake mix over top of fruit mixture; drizzle 8 tbsp. melted butter over cake mix. Sprinkle with 3/4 cup finely chopped pecans and bake at 325 for 30 - 35 minutes, until brown. Serve with a dollop of Terrific Whipped Topping.
Stir together 6 cups Rice Chex cereal and 2 cups of walnut halves in a 9 x 13 pan. Melt 1/4 cup butter, 1/2 cup brown sugar, and 1/2 cup of Blueberry Mix. Heat until boiling, simmer for two minutes. Add 1/2 tsp. baking soda and stir until foamy. Pour mixture over cereal and nuts and stir to coat well. Bake at 250 degrees for one hour, stirring mixture once. Remove from oven and spread on a cookie sheet to cool.
Blend together 8 oz. cream cheese, 8 oz. thawed whipped topping, and Southern Blueberry Mix. Fold in 1 cup blueberries. Scoop onto waffle and drizzle with more Southern Blueberry mix. Can also be served as a dessert!
